Baked Spiced Apples

Cooked apples with spices are warming, moist, easy to digest, and great for breakfast, especially in the fall and winter. I especially love to bake my chopped apples because I can toss it all together, put it in the oven and forget about it for 30-45 minutes while I’m showering and getting ready for the day, rather than standing over a pot on the stove to make sure it doesn’t burn.

Ingredients & Supplies

  • 1-3 apples, depending on how many you’re trying to feed (my favorite are honeycrisp)

  • Spice blend (I eat this frequently enough that I make a spice jar of this blend to have on hand using the following ratio)

    • 2 parts cinnamon powder

    • 2 parts ginger powder

    • 1 part cardamom powder

  • Ghee

  • Water

  • Oven-safe baking dish with a lid or foil to cover

Instructions:

  • Preheat oven to 375° F

  • Core and chop apples (sometimes I peel them first and sometimes I don’t) and put in baking dish

  • Add 1-2 teaspoons of ghee

  • Sprinkle on 0.5 to 1 tsp’ish of the spice blend, depending on how many apples and how spiced you want them

  • Add ~1 tablespoon of water

  • Stir well to evenly coat the chopped apple

  • Cover the dish with the lid or foil

  • Bake in oven for 30-45 minutes until the apples are soft, but still retaining their shape. It takes longer with more apples.

Tips:

  • Feel free to play with ingredients:

    • Try adding some pear

    • If you tend towards constipation, add a small handful of raisins with an extra tablespoon of water

    • For added nervous system support, try freshly grated nutmeg. Nutmeg also has a binding quality, so can help bind stools when they are loose.

  • One of my favorite places to get spices is Burlap & Barrel. I used their Royal Cinnamon, Buffalo Ginger, and Cloud Forest Cardamom in the batch pictured here.

  • You can use store-bought ghee or make your own. See my ghee recipe for more info.
